Chicken Burrito Bowl Recipe

This chicken burrito bowl recipe has everything you'd put in a burrito, without the large flour tortilla: chilli-lime chicken, rice, black beans, sweetcorn, salsa, lettuce and avocado.

It is made for meal prep. Cook the chicken, rice and beans once and you have four lunches ready to pack.

Tips

  • For meal prep, keep the avocado and salsa separate so the lettuce stays crisp.
  • Use a pan-grill or barbecue for the chicken to get charred edges.

Swaps and variations

  • Vegetarian or vegan: use extra beans and roasted sweet potato instead of chicken.
  • Pescatarian: use prawns, cooked for 2 minutes a side.

Storage

Packed bowls keep 4 days in the fridge (add avocado on the day). Cooked rice should be cooled quickly and eaten within 4 days.

Frequently Asked Questions

It is usually lower in calories because there is no large flour tortilla, but the toppings decide the total. Cheese, sour cream and extra rice add up fast.
