Chicken Congee Recipe
This chicken congee recipe makes a pot of jook, the silky rice porridge eaten for breakfast across southern China: a little rice simmered in a lot of stock with ginger until it breaks down, with shredded chicken stirred through.
It is gentle, warming and very easy, and you can top each bowl differently.

- Classic toppings: fried shallots, a soft egg, pickled vegetables, crushed peanuts.
Swaps and variations
- Vegetarian: use vegetable stock and shiitake mushrooms instead of chicken.
- Gluten-free: top with tamari instead of soy sauce.
