Lentejas Recipe (Spanish Lentil Stew)
This lentejas recipe is the Spanish lentil stew cooked in homes all over Spain: brown lentils simmered with a sofrito of onion, pepper, garlic and tomato, plus carrot, potato, bay and smoked paprika.
Chorizo is often added; this version gets its smoky depth from pimentón instead, which keeps it lighter and vegan.
