Thai Green Curry with Tofu Recipe
This Thai green curry with tofu recipe uses one can of coconut milk for four servings, with plenty of aubergine, green beans and pepper so the curry stays generous while the calories stay reasonable.
Shop-bought green curry paste keeps it to about 30 minutes; check the label if you avoid shellfish, since many pastes contain shrimp paste.

Tips
- Curry pastes vary a lot in heat; start with 2 tbsp and add more after tasting.
- Use light coconut milk to cut the fat further, or replace a third of the can with stock.
Swaps and variations
- Vegan: choose a curry paste without shrimp paste and use soy sauce, not fish sauce.
- Chicken: use 500 g sliced chicken thighs instead of tofu, added in step 3.
Storage
Keeps 3 days in the fridge. Freezing can make tofu spongy and coconut milk grainy.

Frequently Asked Questions
USDA's SR Legacy database has no record for Thai curry paste, so it's listed as not counted. Pastes are mostly chillies, herbs and aromatics, so 3 tbsp adds relatively little next to the coconut milk.
Green curry paste is made with fresh green chillies and herbs and is usually the hotter one; red curry paste uses dried red chillies and is deeper and smokier.
